Sugar Free Raspberry Bread

So like many of my other baking adventures this sugar free raspberry bread was a bit of a fluke.  I started throwing things together one afternoon when I really should have been making dinner.  (I’d rather bake over cook any day!)

 

Luckily for me it turned out really well, and in the spirit of full disclosure – most of it was gone by the time dinner was made.

 

It’s a good thing it’s healthy!

 

 

Ingredients
1/2 shredded coconut

1/2 cup walnuts chopped finely
1 cup almond meal
1/2 cup oat bran
1/2 ground flax
1 tsp baking powder

1 mashed banana
1 cup raspberries (frozen or fresh)1 egg
1/2 cup water
1/4 cup 100% juice
2 tbsp coconut oil

1. Mix dry ingredients in a large bowl.
2. Mix wet ingredients together then add to dry.
3. Mix gently until combined.
4. Spoon into a pan and cook until your knife comes out clean.

 

Don’t be too concerned if it doesn’t rise too much, it is a dense bread due to the heavy ‘flours’.  You could add a self-raising wholemeal flour if you prefer it a bit lighter.
