Sugar Free Christmas Slice

After making coconut snickers slice a couple of months ago using coconut oil to make a healthier chocolate I’ve been dreaming of other combinations to make. This sugar free christmas slice started off as an attempt to make a rocky road version but the chocolate was too runny and coated everything making it ‘not rocky enough’.  Also I couldn’t think of a healthy substitute for marshmallow. Let me know if you think of something healthy that has a similar texture.  I will perfect it before Christmas!

In the meantime, I’m going to enjoy this deliciousness.  I love happy accidents.

Ingredients
1 cup melted coconut oil
1/3 cup cocoa powder
2-3 tbs honey
2 cups mixed nuts and dried fruit (I used dried cranberries, pistachios and cashews)
1/3 cup shredded coconut and some to sprinkle on top.

Method
Mix. Spread. Freeze. Cut. Enjoy!
