Sugar free Carrot Cake Slice
Yes she is a bit ugly. But trust me, she is unbelievably delicious.
This sugar free carrot cake slice is amazing and next time I plan to make it even better by toasting all the nuts and seeds first. You could easily add a cashew cream topping but it really is sweet enough without.
And best of all – mix, spread, bake is that’s required.
Ingredients
2 cups carrots, grated
2 1/2 cups oats, processed to flour
2/3 cups shredded coconut
1/2 cup dates, chopped
1/2 cup almonds or walnuts, chopped
1/3 cup pepitas
1/3 cup flax seeds
1/3 cup sunflower seeds
1 tsp vanilla
1/4 cup coconut oil
1/3 cup honey
1 cup milk (any variety will work – cow’s, almond, rice, etc)
Method
Mix.
Spread into pan.
Bake.
(Do I ever bake anything that has a more complicated process?)
Yum! Coconut oil is awesome, I also use nuttelex instead of butter day to day and for a butter substitute it has a really good flavour.
bake at what temp and for how long? Keen to make this for todays afternnoon tea/tomorrows lunchboxes. looks v yum and hopefully a way of getting my fussy 6 yo to eat something healthier than milk arrowroot biscuits
