Sugar and Dairy Free Frozen Raspberry Chocolate Dessert
This frozen raspberry chocolate dessert is the perfect treat; delicious and nutritious. I made it last week to finish off our early Christmas dinner with Andrew’s family and even the ‘real dessert’ eaters of the bunch said it was delicious. That’s a win in my book.
Base
2 cups walnuts
1/4 cup cocoa
1/4 cup maple syrup, honey or agave
2 tablespoons coconut oil
Filling
3 cups cashews
1/2 cup cocoa
1/2 cup maple syrup, honey or agave
1/4 cup coconut oil
1 teaspoon vanilla
1/2 cup raspberries and extra to decorate (frozen or fresh)
up to 5 tablespoons of coconut milk
Method
Base-
1.Whiz all ingredients in a food processor then press into the base of a spring form pan.
2. Freeze
Filling-
1. Whiz all ingredients except for raspberries and coconut milk in a food processor until smooth.
2. Add small amounts of coconut milk until it is smooth enough to spread.
3. Mix through raspberries.
4. Spread over base and place back in the freezer.
Decorate with raspberries and enjoy!
