Real good food – peppermint brownies (made on beans!)
Do you eat oats for breakfast? Beans? A little honey? These peppermint brownies are practically a breakfast food then!
Yum! Go forth and make. You won’t regret it!
Base
1 x 400g can red kidney beans, drained
3 tbsp cacao or cocoa
1/2 cup oats, processed into flour
1/3 cup honey
2 tbsp coconut oil
2 tsp vanilla extract
1/2 tsp baking powder
Whiz it all together.
Bake at 180 degrees until a knife comes out clean.
Icing
1/4 cup cacao or cocoa
2 tbs coconut oil
2 tbs honey
1 tsp pepperment extract
Melt together over low heat.
Pour over cooled brownie base.
Try not to eat them all in one go!
