Raw Vegan Coconut Snickers Slice
I’d love to take credit for this vegan coconut snickers slice deliciousness, but I’m afraid I can’t. This one was made by my awesome sister-in-law Karmen. It’s probably needless to say that we get a little carried away when we are together. We’ve already got plans for raw rocky road and cherry ripe versions. Mmmm.
Anyway no words are really needed here. Here’s the recipe! Enjoy.
Base
1/2 cup almond meal
1/3 cup maple syrup
1 cup sliced almonds
1/4 cup pine nuts
Middle Layer
1 cup medjool dates
1/2 tsp vanilla essence
2 tbsp melted coconut oil
small amount of water as needed
Chocolate Layer
1/2 cup maple syrup
3/4 cup cocoa powder
1/3 cup coconut oil
Method.
Blend. Layer. Freeze.
Simple!
On a side note. Does anyone know why health food store coconut oil tastes and smells of coconut whilst the supermarket version doesn’t?? Puzzling!
I wish I had a sister in law who made me treats like that! I guess I will just have to make it myself!
Sounds like a delicious treat! Going on my list of things to try. The reason why the coconut oil smells and tastes different is because the health food store most likely stocks a better quality product, e.g. virgin organic coconut oil, which will be less refined, therefore more likely to taste and smell like what it is – coconut! So essentially, it’s better for you 🙂
