Healthy ‘Mint Slice’ Slice
I LOVE mint slice biscuits but I don’t love the sickly sweet feeling I get after I eat them.
I’ve been playing around with a few recipes and I have to admit I am ridiculously excited about this healthy mint slice.
Biscuit Base
1/2 cup coconut flour
1 1/2 cups almond meal
1 tsp baking powder
1 tsp baking soda
1 cup cocoa
1 tbsp coconut oil
1/4 cup apple sauce
1 tsp vanilla
3 tbsp almond butter
1/2 cup honey
Method
Mix dry ingredients together.
Mix wet ingredients together (melt coconut oil if necessary).
Mix both together.
Press into a slice pan (use your fingers and a bit of water it gets a bit sticky).
Cook at 180 degrees for about 15 minutes or until you can slide a knife through.
Leave to completely cool.
Mint Layer
2/3 cup shredded coconut
2/3 cup cashew nuts
1/4 cup coconut oil
1/4 honey
3 tsp peppermint oil
Method
Mix the lot in a food processor until almost smooth.
Spoon over cool base.
Put in fridge to set.
Raw Chocolate Layer
1/4 cup coconut oil
1 tbs cocoa
4 tbs honey
Method
Mix well and spread over mint layer.
Place in fridge until set.
Now I challenge you to not lick any of the bowls after each layer. Actually who am I kidding, why else do we bake?!
