Healthy Lime Tart

One of the best things about living at the coast is the farmer’s market that sets up every week just down the road from us. Fresh produce!

I’m really appreciating not having to plan well in advance what I will cook for dinner and snacks.  I used to do a big shop every week or fortnight, but now we just take an afternoon walk and pick up ingredients for dinner that night.  I’m finding I’m cooking more as a result, which is why I have photos of this delicious healthy lime tart to show you.

Although ‘cooking’ might be stretching it a bit.  It’s a combination of this recipe and this one, and it’s so healthy it’s ridiculous, although it’s definitely not low fat. Good fat though do don’t be put off.  Maybe just don’t go eating the whole thing in one go.

1 cup dates
1 cup nuts (almonds, walnuts, cashews, brazil nuts)
1 teaspoon vanilla extract

Whiz in the food processor and press into a pie tin.  Put it in the freezer to start setting whilst you make the filling.

2 Avocados
2 Tbs Lime Juice
2 Tbs Honey

Blend until smooth. Spoon on top of pie crust. Freeze until hard.

    There are several raw cafes on the sunshine coast you may want to try if you like that key lime pie. Ground in Buderim (hmmmmmm yum) and one in Rosemount I think its called Rawsome or Its Rawsome or something like that, The Big Pineapple is in the midst of being revamped and they have a farmers markets and a good one at Noosa too
