Healthy Christmas Truffles
More Christmas prep over here. Yes I know, who even am I? Actually let’s be honest. I made these healthy Christmas truffles last week. There are none left. I’m not ashamed. They were amazing.
These are full of good stuff. Don’t go crazy though – they are mostly nuts after all. They make the perfect homemade Christmas gift or snack to take to late afternoon Chrissie get-togethers.

Ingredients
1 cup almonds
1 1/2 cups hazelnuts
2 1/2 cups shredded coconut
3/4 cup coconut oil
1/2 cup honey
1/2 cup cacao or cocoa
To roll –
1/4 cup desiccated coconut
1 tbs cocoa
Method
Place all ingredients into a food processor and blend until smooth. Check they can be rolled evenly into balls (Add extra nuts or coconut if too wet. Add a touch more honey or coconut oil if too dry.)
Mix extra cocoa and desiccated coconut on a plate.
Roll mixture into balls, coat in chocolate coconut and place in the fridge to set.
Hide extras in back of the fridge so family doesn’t eat them all on you.
