Double chocolate sugar free ice-cream cake
Would it be too forward of me to suggest that this creation is beyond words?! Trust me, it is. Born from a hybrid of other things we’ve been cooking up around here, this sugar free ice-cream cake is bound to satisfy even the sweetest tooth.
{And for those who want some clarification on the ‘sugar-free’ thing; yes there are still sugars in this recipe (and in most that I post). But we mostly subscribe to the ‘natural is best’ philosophy so our sugars come from fruit and honey. Just in case you were wondering. }
Ice-cream layer
3 bananas
2 1/2 cups of cashews
4 tbsp cocoa
2 tbsp honey
Blend in food processer until smooth.
Chocolate Layer
3 tbsp coconut oil
5 tbsp cocoa
4 tbsp honey
3 tbsp peanut butter
Heat slowly in saucepan until combined.
Assembly
Line a pan with baking paper and layer the ice-cream and chocolate, finishing with a thick layer of chocolate.
Freeze for at least 4 hours before serving.
