Apple Cinnamon Almond Cake

As the weather finally cools down a little here on the Sunshine Coast, we are starting to crave warming richer foods.  This apple cinnamon almond cake ticks all the boxes, and it’s good for you.




400g pie apple (you could cut, peel and steam/boil your own or cheat like I did and buy the tinned variety)
2 tbsp cinnamon
2 cups almond meal
1 tsp baking powder
2/3 cup your preferred milk
3 tbsp honey
1 egg or substitute ground flax


Bake at 180 degree for 40 minutes or browned  (Cake will still be fairly moist from the apple but knife should be free of cake mix.)
Top with Greek yoghurt and devour!
